Vegetable Muffins

Here is a snack recipe from one of our WLC challengers: Vege Muffin with a twist. Ingredients for 6 muffins:

What you'll need
2 eggs, beaten (just how I feel after training)
1 table spoon of yogurt
1 tablspoon of self raising flour
1 tea spoon of grated parmesan
1 small grated carotte
1 small grated zuchini
Goat fetta cut in little pieces (12 pieces)
1 clove of garlic, a few leaves of parsley ( very good for flavour)
50 ml of milk (light)

What you'll need to do
Mix all ingredients, and poor in muffin tray - silicone is better, no need to add fat. You can lightly spray with olive oil.
Bake it in the oven at 180 degres for about 20 minutes.

You can eat it cold as a snack or warm with a salad for lunch!
