Banana & Walnut Muffins

INGREDIENTS {Makes 20 Small or 10 Large Muffins}

  • 3 free range eggs

  • 75g or butter melted

  • 150g banana

  • 60g medjool dates, pitted & roughly chopped

  • 40g coconut flour

  • Pinch sea salt

  • 2 tbsp. protein powder

  • ½ tsp bicarb soda

  • 60g Chopped Walnuts

  • 200g cream cheese

  • 2 tbsp. honey 1 tsp. vanilla

METHOD

  1. Place eggs, oil, banana, dates and honey in a small food processor, blend on medium speed until combined. Stir through chopped walnuts.

  2. Scoop batter into mini muffin pan lined with mini muffin patty cases, mixture should make 20 small or 10 larger muffins.

  3. Bake at 180° for 13-15 minutes, keep in mind that oven temperatures may be vary.

  4. Remove from oven, cool in tray for five minutes then turn out onto rack to finish cooling.

  5. Blend together the cream cheese, honey and vanilla until smooth. Spread onto the cooled muffins and serve! 

    NOTES: Have one as a snack or treat with a serving of vegetable sticks
