Mountain Bread Quiche

Such an easy to make lunch or brekkie for the whole family during busy lockdown and home schooling days. Slice it up and take it on a walking adventure with the kids - beats sweaty sandwiches!

Ingredients

  • 3 Mountain bread wraps

  • 8 Eggs, whisked

  • 150g Baby spinach

  • 150g Broccoli, chopped

  • 200g Ricotta cheese

  • 50g Feta cheese

  • Salt and pepper

Method

  1. Preheat your oven to 180oC.

  2. Grease a ceramic pie dish with a little butter or olive oil. Line the dish with the 3 mountain bread wraps overlapping them so there are no holes in the bottom of the

  3. Whisk together all of the remaining ingredients and pour over the mountain bread wraps.

  4. Bake in the oven for 30 - 35 minutes until golden and cooked through.

  5. Leave to cool slightly before slicing.
