Greek Lamb Koftas

A delicious light dinner! Packed full of protein and nutritiously-dense herbs. Perfect addition to any BBQ, or to be served with a Greek Salad for a complete meal!

Ingredients

  • 320g organic lamb mince

  • 1 tsp. ground cumin

  • 1 tsp. ground coriander

  • 1 large garlic cloves, crushed

  • 1⁄2 tsp. salt

  • 1 tsp ghee

  • You'll need 6 pre-soaked bamboo skewers

Yogurt Ingredients

  • 250g thick natural yogurt

  • 1 large garlic clove, crushed

  • 1⁄2 tsp. salt

  • 1 cucumber, deseeded and finely chopped

  • 1⁄2 bunch mint, finely chopped

  • 1⁄4 bunch parsley, finely chopped

Method

I. Mix together all the kofta ingredients with your hands until well blended.

II. Divide into 10 balls, and then roll each ball on a board with a cupped hand to turn them into ovals.

III. Thread onto pre-soaked skewers.

IV. Heat a pan over a medium heat and add the ghee.

V. When hot cook for 3-4 minutes on each side (four sides). Don’t turn until they are well sealed or the meat will stick to the pan.

VI. Mix together all the ingredients in a medium bowl.
