Tuna Nicoise Salad

A simple mid-week lunch, easy to make and packed full of proteins and veggies!

Ingredients

  • 200g Baby potatoes, halved

  • 100g Green beans, trimmed

  • 2 Small Cans Tuna in brine, drained

  • 2 Eggs, boiled and peeled and quartered

  • 80g Cherry tomatoes, halved

  • 30g Black olives

  • 80g Lettuce, roughly chopped

  • 10ml Olive oil

  • 10ml Red wine vinegar

  • 5g Dijon mustard

Method

I. Boil the potatoes in a large saucepan until just tender, add the beans and cook until bright green and just cooked. Drain and add to a large salad bowl.

II. Add tuna, olives, lettuce, egg and tomatoes and gently toss to combine.

III. Whisk together the olive oil, vinegar and mustard and toss through the salad
